Unfortunately that is a feature they have removed.
iChat, the app that Messages is based on used to have a "Messages" Preferences Pane and the Format menu item as well.
The former was used to give the Font it's colour, choose the Font and colour incoming and outgoing balloons.
The Menu item meant you could change individual Letters or words within the text you were about to send.

The App also used to have different options as to how the Text looked as Balloons was only one option.

You are now restricted to the outgoing iMessages Blue or the SMS or other service green and the grey for any incoming messages be they iMessages, SMS or AIM, Jabber or Yahoo.
The Incoming grey balloons overrides older iChat colours that might be sent to you.

It would take a relatively large number to achieve this.
One of the issues with iChat becoming Messages was the number of places that the word Messages appeared in the original App.
As well as a pane of the Preferences there was the item in this Menu http://www.ralphjohns.co.uk/versions/ichatvers4/ichatvers4pics/menus/slides/iCha t4ViewMenu.html
Strangely the first version of Messages (version 7 as the iChat Numbering continues) had the text and balloon choices.
The iPhone just ignored them if sent.
Whilst a Mac might still use them in the other services and in Mac to Mac iMessages conversations the iPhone would ignore the extra info. (it could be done).
